New Calf, Pizza Crusts, & Sea Salt

Hello Farm Friends,

   

   Jenny had a cute, little bull calf born two days ago.  We named him Jim Dandy!  This means that we will have extra milk in just a few days for those that have been waiting for milk.  See what we mean by cute?

   Our friend, Chef Louie from Serendipity Catering in Atlanta, has been working for a couple years on finding high quality sea salt.  Good salt is pretty hard to fine because the commercial table salt is completely stripped of all minerals (which is then sold to other industries) and usually bleached, too.  And since most 'sea salt' has too many heavy metals (because of the poor harvesting method), it is difficult to find salt that is loaded with essential minerals and has not been heated.  We have his Iberian Artisan Sea Salt available in three sizes:  Course, Fine, & Flor de Sal.  Chef Louie calls Flor de Sal "the cream" of the salt.  "The cream" has many more times the minerals and will simply melt on even a salad.  Chef Louie is nearly finished with his new website that will have more details and information about his superior quality sea salt.  

    Iberian Artisan Sea Salt is:
        • slowly harvested by hand using traditional methods
        • made in accordance with Lunar phases
        • high in minerals, especially magnesium, potassium and sulfur
        • dried only by sun and wind, never processed with high heat or chemicals
        • certified organic by European standards

   We have about a dozen Freedom Ranger Broiler Chickens left for Saturday, Oct. 24th, 2015.  If you have not reserved yours yet, now is the time to do so as this will be the last chicken processing for the year.  Please fill out a 'Broiler Order Form' on the back porch or you may e-mail us with the quantity you'd like us to reserve and mail your deposit to the farm ($15 deposit per chicken).  If you would like to help us process chickens that Saturday, please e-mail us for details.

   Anna has a new recipe for the Strawberry and Bilberry Granola Bars! They are mouth-watering just to look at. Anna is putting PopTarts out of business with these.  Be sure to give one of the new bars a try on your next farm visit.  Speaking of the Granola Bars, both Jelly & Chocolate Granola Bars as well as the Granola Cereal will soon be made with Organic Einkorn Flour!  See below for some quick facts about Einkorn.

   Susan has created some pre-baked Sourdough Pizza Crusts that are made with Einkorn, too.  Daniel & David have been 'test-tasting' the new crusts.....though not plain and dry, of course....but with plenty of pizza sauce, Pastured Sausage, & Raw Milk Cheese.  They used words like 'Wow' and 'Delicious' and even said 'That's the best pizza I've ever eaten!"  We will have the new Pizza Crusts available for purchase starting this Saturday, October 17th.  They will be located in the freezer part of the "A" milk fridge.  For info about Einkorn, read the quick facts below.

Quick Facts About Einkorn

Einkorn (rhymes with “fine corn”) is the oldest food to make its way back to your table.

Einkorn is the world’s most ancient wheat and the only wheat that’s never been hybridized. Einkorn is a delicious, healthy alternative to mass market wheat, and can be an excellent solution for those with gluten sensitivity.

Einkorn is the only wheat to have never been hybridized (unlike modern soft and durum wheat), and to have only 2 sets of chromosomes. This is real wheat, the way it was meant to be.

Einkorn means “one grain” in German. That’s because einkorn only has one grain attached to the stem, while other wheats have groups of four grains.

Just a few years ago, einkorn was close to extinction. Einkorn was abandoned 5,000 years ago, because it is difficult to harvest and mill, and has one fifth the yields of modern wheat.

Why should I eat einkorn? There are many reasons, but here are a few:
• Flavor, Flavor, Flavor: Einkorn just tastes great! The intensive farming methods used to raise yields have stripped flavor and vital nutrients from today’s wheat. With einkorn, you can actually taste wheat the way nature intended it.
